Yeasts are microorganisms that can digest sugars either with or without oxygen. If this digestion occurs in a low oxygen environment they produce alcohol. At some point early man put some fruit juice in a sealed container which trapped airborne yeast in an ideal environment for alcohol production. The result was wine. No one is sure what the first fermented product was but beer, wine, and leavened bread all show up around the world at about 6,000 BCE.
